Simple & Perfect Honey Granola

A jar of good granola is one of those things that is just nice to have around. Humble, but delightful, and ready to nourish you when you need a quick breakfast or snack. Infinitely customizable to suit whatever you love. Hearty, yummy, and perfect in so many ways.


Oats and honey are a classic combination for good reason, and there is so much to love about oats. They are fibre-rich, support serotonin production, and are a source of choline, which is important for learning, memory and mood -- among many other things. They are also a fantastic galactagogue (meaning that they aid in supporting a healthy milk supply in nursing mothers), which is why this recipe came into being after the birth of baby Sage last year. Along with the flax seeds (another galactagogue), the hearty walnuts and pumpkin seeds, this simple granola hits all the right notes, and is now a favourite at the Beewell homestead!





There are so many ways to enjoy it -- with yoghurt and berries, as a crunchy topping to a smoothie bowl, or simply poured over with your favourite milk -- and as many ways to customize the recipe as you can possibly dream up. (I will leave a few of our favourites down below!)

Simple & Perfect Honey Granola

(Gluten Free | Dairy Free | Refined Sugar Free)

Ingredients
1 1/2 cups (GF) rolled oats
1/2 cup walnuts, roughly chopped
1/2 cup pumpkin seeds
1/4 cup flax seeds
1/4 cup honey
2 Tbsp. organic virgin coconut oil
1/2 tsp. vanilla extract
1/2 tsp. sea salt


Directions

Preheat oven to 325 F.

In a large mixing bowl, combine oats, walnuts, pumpkin seeds, and flax seeds.

In a pot over low heat, melt the coconut oil. Whisk in the honey, vanilla and sea salt. Pour the melted honey mixture over the dry ingredients and stir well to combine.

Spread out evenly on a parchment lined baking tray and bake for 15 minutes, or until the edges are just beginning to brown. Remove, stir, and return to the oven for 5-8 minutes, or until the granola is lightly golden. Remove from the oven and allow to cool completely before transferring to a glass jar. Store at room temperature. Enjoy!
 

A Few Variations:


Chai Spice Granola: Use 1/4 cup Chai Spice Elixir Honey (In Place of Pure Honey)
Golden Chai Granola: Use 1/4 cup Golden Chai Elixir Honey

Additions: 1/2 cup Unsweetened Shredded Coconut | 1/4 cup Dried Fruit (Dried Cranberries, Raisins, Chopped Dried Apples, etc.) | 1/4 cup Hazelnuts
